I actually don't think merch qualifies as a big project to them. There's nothing groundbreaking about it, they put out four new items into a store with dozens of existing items. I don't think it's a big project but if it involved getting permission from EA to get the rights to use the designs and they had some delay because of that then I can imagine it would be stressing. Regarding 'that week in March' actually referring to legal issues with EA:
I thought so too for a minute, but now I'm not convinced. It wouldn't make sense, as if we assume they always planned to release the Dil merch around the 3 year anniversary of beginning the Sims series (which I do assume) then Dan delaying telling us about 'that week in March' by two months makes no sense. That suggests they initially planned to release the Dil merch in August, which I guess is possible but it makes more sense to have it coincide with the anniversary, which is late September, and I'd be surprised if they hadn't always planned for it to be that way. If it does turn out that 'that week in March' really was just something to do with the Dil merch it'll be a massive letdown lmao, but it doesn't make a whole lot of sense to me.

Whether or not "that week in March" has to do with Sims merch/EA legal issues, I think them releasing the merch for the Dil bday video was a relatively last minute decision (when it was pointed out to them a while back that Dil's bday was coming up) that worked out conveniently for them. I guess so, but they were pretty busy on the actual exact anniversary - they were headed to Spain, so it could just be that they were too disorganised to have it pre-filmed and ready to upload by then, alongside the newsletter. Plus, they were due a livestream that weekend if they wanted to stick to their fortnightly gaming livestream schedule, so it could be that they wanted to wait a bit after that before uploading the Sims. They'd also been on holiday the week before, which would have contributed to them running a bit behind schedule. My main point was that I don't think that they had always planned from months ago to release the Sims merch on Dil's bday(I'm assuming it definitely took more than 1 month to plan/design, create test versions, get EA's permission/figure out a deal with them lol). I think the timing of the completion of the merch worked out nicely for them to kill two birds with one stone and put the merch spon in Dil's bday video. True, they went on holiday and to Spain...and that could be why they weren't able to prefilm the Sims vid+merch spon to have it released on Dil's actual bday (as opposed to my earlier suggestion that perhaps they were waiting for the merch to be done), but again, all I'm saying is that I don't think they had planned months in advance to reveal the merch on Dil's bday---I think it was something they decided fairly recently because things were convenient. As for your point about the gaming livestream, well....that's one that would've been much easier to postpone for a Sims vid/merch spon if they had actually planned to release the merch on Dil's bday from months back.

I would be kinda letdown too if that "week in march" was about the merch.

Mentioning the specific "10 days" tells me it was something a little bit more serious than working with EA/merch copyright stuff. Not to desensitize the stressful process I'm sure, but that to me is just a stressing thing, not worth mentioning the number of days that made it so challenging.
I know the speculation of them finding/buying a home is a thing but I personally don't really have any other theories on what it could be, I just don't want it to be about merch lol.

I think Tabitha is a sim that the game randomly generates. This wiki says a bit more http://sims.wikia.com/wiki/Townie, but basically, she's a sim that the game randomly put together that has a career and character traits but isn't in every game.
I mean... I'm not sure at all. I just started looking her up and found a few conspiracy posts online about how they potentially made her because she doesn't exist elsewhere. Oh I've definitely heard the Tabitha theory somewhere before. I'm not sure I believe that they created her. I read somewhere that she's a pre-generated Sim for their town (which explains her ex husband and annoying traits) but I do remember seeing somewhere that they changed her aspirations from Master Mixologist to Serial Romantic. Their entire approach to playing the Sims is strange. I still can't wrap my head around the fact that they've dragged the series out for 3 years. I don't think I've ever seen another YouTuber slowly bleed out a gaming series this way. I really do wish they'd do that long livestream and let Dil die in some freak cloning accident or something. The gameplay has gotten really, really stale by this point, for me anyways.

The Sims creates a whole different set of townies each time you start a game with a fresh neighbourhood so no two games will have townies that look the same or have the same names. The devs make characters as neighbours so you have some in houses to play or for your sims to meet, so everyone has people like the Pancakes, Landgraabs, Goths and Johnny Zest.
I think the Dil plushie's kinda cute, though not as cute as the Deppy ones. I thought all the accessories were kinda cool, but in another way it looks overdone. I find it funny that their heads are different shapes, the Dil one's all wide and round while the Dan and Phil ones are kinda long. Also the Phil one's head is smaller than the Dan one. Unless they get squashed in packing, idk. I know Dan's taller, but if that's why then it's pretty exaggerated. The tshirts are cute, though I'm not totally sold on the slippers. They're nice enough, just not the cutest. If pale green suited me I might buy the Tabitha one. I suit black just fine, but the Dil design doesn't do it for me.
On the subject of plushies, a fan artist made her Phil plushie the hoodie and moose hat from the Shelter videos and took it into the woods for a photoshoot, it's the cutest thing

this is only further made worse by dan's comment on the last sim's vid where he says "maybe in 3 years dab can live in the fancy penthouse" or something along those lines. this is a probably a reach, but it gives some insight about how much longer they think they will occupy the platform and how they don't seem to be going anywhere anytime soon. i feel like we're all gradually moving towards an AU where "big youtubers" like felix and jake paul fall from power with a declining sub count while dan and phil sit smug in their gaming chairs and put out yet another Google Feud video with some eye contact only for it to get over a million views. the sims series is going to be dragged out for atleast another few years so i guess our only option is to age with Dil.Their entire approach to playing the Sims is strange.
