I'm not sure what you thought was "pixelated" exactly, but I think what you're seeing there is not a sign of manipulation but just of the screenshots being resized for the video. If you save an image and then you want to show a zoomed-in portion of it, you only have a small number of pixels actually there to show, and they'll look a bit blurry or weird as you make them bigger. It is "manipulated" in the sense that the original image was changed, but only "changed" in the sense of being probably saved as a smaller file, then cropped, then enlarged again?

So yeah, some "image manipulation" is just the stuff you do to make images you got from one place work in a different place and is totally normal!

Also they have both phones so I'd expect if they were going to "fake" anything they'd just send actual texts. Like the jockstrap joke might have been planned before they texted it, especially as something recent? But it'd still be real screenshots. I don't know if it was, just like, it wouldn't strike me as weird if they did intentionally slip in something to have a Youtube-appropriate salacious joke for the video.
