IDK, I think play pretty close to who they are irl. The BBC show and the ls are unedited, so it would be hard to remain in character 100% of the time (if they were "in character.") Same with their collabs: would be difficult to play something you aren't. So, yea they may have more depth / things they don't talk about on-camera, but I think we see who they really are for the most part.
However, in the stage show, both overplay a bit (particularly Dan
no surprise there,) but that's part of the show's charm. (You can hear it in Dan's voice in #shoegate vid when he says "Alright, see you in a sec."
